Nothing better than a mexican breakfast. and here is a super easy recipe of delicious chilaquiles.
Serves for two people
you will need:
6 Soft corn tortillas
4 tomatoes
1 sweet onion, cut in half
2 garlic gloves
100 gr Shredded chicken
2 eggs
Habanero sauce
Avocado
Frying oil
Cilantro, finely chopped
1 Cut the tortillas in 8 equal pieces, like a pizza. Cut into brunoise one of the onion halves.
2 For the "tatemada" sauce: in a super hot pan without oil cook the tomatoes, the other half onion and garlic cloves. Cook it until the ingredients get dark spots all around them. Then, mix everything in a blender with a little bit of water, after you make the sauce place it in a deep saucepan and bring it to a boil. Add a few dashes of habanero sauce.
3 In another saucepan heat the frying oil and cook the tortillas over medium heat until golden brown and crispy.
4 Add the tortillas into the sauce and mix well
5 Cook the eggs. Sunny side up is recommended, but is up to you.
6 For plating: Scoop the tortillas with the sauce and place them on a deep dish, then add the shredded chicken, the diced onion and little bit of cilantro. Top with the fried egg. Garnish with avocado slices and a lime wedge.
